Zedoary is a kind of root herb. It’s commonly ground into powder and to be used in Chinese cooking. This dish is served as Dim Sum in some of the Chinese Restaurants.
Ingredients:
1 lb Chicken Feet
30 g Zedoary Powder (沙薑粉)
2 tbsp Coarse Salt
2 tbsp Soya Sauce
2 tbsp Cooking Wine
2 Cloves Garlic
1 L Water
Preparations:
1. Bring a large pot of water to boil. Add chicken feet. Let it boil for 5 minutes.
2. Remove chicken feet from hot water, put them into an ice-water bath immediately.
3. In a large pot, add 1 L of water, zedoary powder. Bring mixture to boil, add salt, soya sauce, cooking wine, garlic and chicken feet.
4. Let chicken feet boiled for 10 minutes, remove from heat. Do not removed led and let it sit for at least 30 minutes. Serve hot.
