Vietnamese Curry Beef Stew


Curry dish does not has to be cumbersome.   Want to amaze your friend by bringing a delicious curry dish to your pot luck party?  This is a very easy and convenient dish to make. 

 

Ingredients:

  • 1 kg Beef Brisket

  • 2 Diced Onions

  • 1 Diced Tomato

  • 2 Potatoes, cut into pieces

  • 3 Bay Leaves

  • 1 Small Pieces Rock Sugar

  • 2 Pkg Curry Paste

  • 1 Cup Chicken Broth

Preparations:

1. In a medium pot filled with water. Bring water to boil, add beef brisket. Bring it to boil. Let it simmer for 3 minutes. Drain water from beef brisket. Set aside.



2. Heat oil in a sauce pan over medium heat.  Brown each side of the potato.  Set aside.


3. Heat the sauce pan with oil, sauté onion.


4. Add Curry Paste.

5. Add Beef Brisket, Chicken Broth and Rock Sugar.



6. Add Bay Leaves.

7. Let simmer for an hour, until beef is tender.

8. Add potato and Tomato, bring to a boiled.  Turn off heat.  With the lid on.  Let it sit for another 30 minutes.


9. Served hot.
