This is another recipe of traditional food at Chinese New Year. I add a little texture to the cake by cooking the Taro in two stages. Some of the Taros are thoroughly cooked and mashed while simmering but some of them are still in small chunk.
Ingredients:
1 lb Taro (芋頭)
2 Chinese Sausages (臘腸)
2 oz Chinese Bacon (臘肉)
6 oz Rice Flour (粘米粉)
3 Cup Water
Seasonings:
1 tsp Five Spice Powder (五香粉)
3 tsp Chicken Stock Powder (雞粉)
1 tsp Salt
1 tsp Sugar
½ tsp White Pepper
1 tsp Sesame Oil
Preparations:
1. Peel and cut Taro into small chunks.
2. Mix Seasonings with 1 cup of water.
3. In a large mixing bowl, combine Rice Flour with Seasonings. Stir until no lumps.
4. Cut Sausages, Bacon into small pieces.
5. In a saucepan, add oil, Sausages and Bacon. Saute for 5 minutes. Set aside.
6. Using the same saucepan, with the oil from the Sausages and Bacon. Add 2/3 of the Taro. Brown the Taro.
7. Add 2 cup of hot water. Let simmer for 5 minutes.
8. Add the rest of the Taro and simmer for another 5 minutes until the sauce is thicken.
9. Add 2/3 of Sausages and Bacon. Mixed well.
10. Remove from heat. Add flour mixture, quickly stir and combine all ingredients into a thick batter.
11. Pour batter into a greased tray. Add the rest of the sausage mixed.
12. Steam over high heat with covered for 60 minutes.
