Sweet and Sour Cucumber (酸甜青瓜)



This appetizer may be served in some Chinese Restaurant. The sweet and sour cucumber is very refreshing. It is actually very easy to make at home.

 

Ingredients:


  • 2 Cucumbers

  • 1 ½ Cup White Vinegar

  • 1 ½ Cup Sugar

  • 1 ½ tsp Salt

  • 1 Red Chili

Preparations:

1. Cut cucumber lengthwise. Mix salt with cucumber for 15 minutes.

2. Rinse cucumber with running water.

3. In a saucepan, add sugar and vinegar. Cook in medium-low heat until sugar is dissolved. Remove from heat and let cool completely.

4. Slice red chili.


5. Put cucumber in a glass container. Add vinegar mixture and chili.


6. Chill in refrigerator overnight. Serve cold.
