This is another way of making a strawberry meringues. Instead of individual serving, why not try making a Strawberry Meringue Cake. Again, this can be made ahead and assemble when ready to serve.
Ingredients:
For the meringue:
4 Egg Whites
½ tsp Cream of Tartar
6 oz Granulated Sugar
Fillings:
1 pkg Vanilla Fat Free Instant Pudding
1 ½ Cups Cold Milk
½ Cup Heavy Cream
1 Cup Strawberry, Diced
Preparations:
1. Preheat oven to 300 degree F.
2. In a large dry bowl, beat egg whites and cream of tartar with an electronic mixer on medium speed until the mixture form soft peaks.
3. Add granulated sugar, 1 tbsp at a time, beat until glossy and stiff peaks form.
4. Mold into 3 round disks 6 inch wide, 2 with an indentation in the centre, the other one with a flat top.
5. Reduced the oven temperature to 275 degree F, baked for 1 hour. Turn off the oven and leave the meringue in the oven for 1 hour longer. Remove from oven.
6. Meanwhile, prepare fillings. In a mixing bowl, whip cream until soft peaks form. Set aside.
7. Pour milk into a large mixing bowl. Add dry pudding mix. Beat until well blended.
8. Stir in whipped cream. Refrigerate for 15 mins or until thicken.
9. Remove filling from refrigerator. Stir in diced strawberry.
10. Put one of the meringues with indentation on a serving plate. Spoon pudding mixture onto meringue. Repeat this step to create another layer.
11. Top the cake with the third layer of meringue.
