Spring Onion Bun (香蔥麵包)



Spring Onion and Roasted Garlic on a bun what a perfect match. Adding a touch of Japanese Egg Yolk Sauce (Mayonnaise) on top of the bun brings the favor to another level.


 

Yield: 18 pieces


Ingredients:


Dough:


  • 65 g Milk

  • 60 g Egg

  • 75 g Utane Starter (See Utane Recipe)

  • 30 g Cultured Butter

  • 30 g Sugar

  • 6 g Salt

  • 195 g Bread Flour

  • 90 g Cake Flour

  • 11 g Milk Powder

  • 8 g Instant Dried Yeast


Topping:

  • 80 g Diced Spring Onion

  • 1 Egg

  • 1 tbsp Vegetable Oil

  • ½ tsp Salt

  • ½ tsp Black Pepper

  • 1 tbsp Roasted Garlic with Olive Oil (Optional)

Preparations:

1. Add all ingredients except Shredded Dried Pork into the breadmaker in the order listed.

2. Select the Dough Mode.

3. When the Dough is done, transfer the Dough to onto a cleaned floured surface. Divided the Dough into pieces, 30g each. Knead into ball shaped. Let the dough rest for 10 minutes.

4. Form oval shaped buns and arrange on baking pan.

5. Let rest in a warm place until it is doubled in size.

6. Make a little cut in the middle of the buns.

7. Brush beaten egg on surface.

8. Combine toppings except Roasted Garlic with Olive Oil.

9. Put some Roasted Garlic with Olive Oil on the of the bun.

10. Put topping onto the bun.

11. Sprinkle some Smoked Paprika (Optonal).

12. Preheat oven to 375 degree F.

13. Baked for 15 minutes
