This is a popular side dish in Sichuan Cuisine. The strong smells of garlic, sesame oil and chili oil make the dish have a unique aroma.
Ingredients:
300 g Duck Tongue (鴨舌)
1 lb Duck Gizzard (鴨胗)
1 ½ tsp Coarse Salt
1 ½ tbsp Sichuan peppercorns powder (花椒粉)
3 tbsp Soya Sauce
3 tbsp Sesame Oil
1 ½ tbsp White Vinegar
1 ½ tbsp White Sugar
3 tbsp Grated Garlic
3 tbsp Chili Oil
Preparations:
1. In a medium pot, add 2 L of water and Coarse Salt. Bring water to boil, add Duck Tongue and Duck Gizzard. Bring it to boil then turn off the heat. Do not remove led and let it sit for 10 minutes.
2. Remove Duck Tongue and Duck Gizzard and put it in an ice-water bath immediately.
3. In a medium mixing bowl, combine the rest of the ingredients.
4. Add the mixture to the Duck Tongue and Duck Gizzard.
5. Chill in refrigerator overnight. Serve cold.
