Spicy Coconut Mussels with Lemongrass


Want a quick and easy dish after a busy day at work?  This may be what you are looking for.  The sauce goes well with a slice of garlic bread or a bowl of steamed rice.

 

Ingredients:

  • 1 kg Live Mussels

  • 2 Stems Lemongrass

  • 2 slice Ginger

  • ½ Onion, diced

  • 2 clove Garlic, diced

  • 1 Long Red Chilli, diced

  • 1 cup Coconut Milk

  • 1 Shallot, diced

  • 1 cup Chicken Broth

  • 1/3 White Wine

  • 2 tsp Fish Sauce

Preparation:

1. Cut Lemongrass into 2 inch long.  Diced onion, garlic, chilli and shallot.  Set aside.

2. Heat olive oil in a large saucepan.  Add onion, garlic, chilli, shallow, ginger and lemongrass.  Saute until fragrant.




3. Add White Wine and Chicken Broth.


4. Add Fish Sauce and Coconut Milk.


5. Bring sauce to boil.

6. Add Mussels.


7. Cover and steam over high heat until mussels begins to open.  About 5 minutes.  Serve hot.
