Quail with Chinese Tea Favour (茶香鵪鶉)


Tea is being used in many Chinese Recipes. It has a unique smells and favour. This is a very simple recipe, the quails are rich with tea and soya sauce favour. All you need is a bowl of steamed rice and some veggie to complete your meal.

 

Ingredients:

  • 8 pcs Whole Quails

  • 3 Cups Water

  • 100 g Rock Sugar (冰糖)

  • 2 tbsp Cooking Wine

  • 6 tbsp Light Soya Sauce (生抽)

  • 3 tbsp Dark Soya Sauce (老抽)

  • 4 Black Tea Bags (紅茶包)

  • 1 tsp Salt

Preparation:

1. In a medium pot add 2 L of water. Bring water to boil, add Quails. Bring it to boil. Let it simmer for 2 minutes. Drain water from Quails. Set aside.


2. Add all ingredients except Quails into a pot. Bring sauce to boil, let simmer for 3 minutes.




3. Add Quails. Reduced heat to medium low, let simmer for 10 minutes.

4. Remove from heat. Do not removed led and let it sit for at least 30 minutes. Cut Quails into half and serve hot.
