Pan Fried Green Onion Pancake (蔥油餅)


This is a must have dish when we go for Traditional Northern Chinese Cuisine.

 

Ingredients:

Dough:

  • 250 g All Purpose Flour

  • 150 g Boiled Hot Water

  • 60 g Cold Water

Filling:

  • 60 g Diced Green Onion

  • ½ tsp Salt

  • 2 tbsp Vegetable Oil

Preparations:

1. Diced Green Onion, mix with salt and vegetable oil.

2. In a large mixing bowl, mix flour with hot water. Add cold water and knead until a smooth dough formed.

3. Covered with plastic wrap and let it rest for about 1 hour. The dough is a bit wet and sticky.

4. Divide dough and filling into 4 equal parts.

5. With a rolling pin, roll each piece into a long thin strip. Brush a thin layer of vegetable oil onto the dough.

6. Spread a portion of filling evenly onto the dough.

7. Fold the long strip with filling inside. Roll it into a spiral round pancake and let it rest for about 1 hour.




8. Flatten the spiral cake. Heat up the saucepan with 1 tbsp of oil. Pen fried the pancake until golden brown on both side. Serve hot.
