This is always one of my favourite dishes. I happened to see fresh Oxtail in the grocery store today, so decided to try cooking it myself. It goes really well with steamed rice or mashed potato or pasta.
Ingredients:
4 lb Oxtail, Cut into Chunks
3 tbsp Butter
1 tbsp Extra Virgin Olive Oil
½ Cup All Purpose Flour
1 Onion, Cut into Chunks
2 Stalks Celery, Cut into Chunks
3 oz Tomato Paste
1 Cup Red Wine
1 Cup Chicken/Beef Stock
3 Bay Leafs
Preparations:
1. Dredge the oxtail in flour, shake off any excess.
2. Heat butter and olive oil in a large sauce pan under high heat. Add oxtail, brown all sides. Set aside.
3. In the same pan, saute onion, carrot and celery.
4. Add red wine to the pan.
5. Add tomato paste, chicken/beef stock and bay Leafs. Bring to a boil.
6. Add the browned oxtail to the pan.
7. Add enough water to cover the oxtails.
8. Cover and cook over low heat for 3 hours, until tender.
9. Add salt and pepper to suit your taste.
