Meringue cookies so airy and crispy, they melt in the mouth. They are very simple and easy to make.
Ingredients:
3 Egg Whites
½ tsp Cream of Tartar
6 oz Granulated Sugar
1 tbsp Cornstarch
3 tbsp Unsweetened Cocoa Powder
2 tsp Instant Espresso Powder
¼ tsp Salt
½ Cup Bittersweet Chocolate Chips
Preparations:
1. Preheat oven to 300 degree F.
2. In a small bowl, mix together sugar and cornstarch.
3. In a large dry bowl, beat egg whites and cream of tartar with an electronic mixer on medium speed until the mixture form soft peaks.
4. Add sugar mixture, 1 tbsp at a time, beat until glossy and stiff peaks form.
5. Add cocoa powder, espresso powder and salt. Beat until well blended.
6. Fold in chocolate chip with a rubber spatula.
7. Spoon 1 tablespoon of batter onto baking sheet.
8. Bake for about 40 minutes for chewy cookies. For crispy cookies, turn off the oven and leave the meringue in the oven for 1 hour longer. Remove from oven.
