Mocha Brownies with White Chocolate Chunks


Who can resist chocolate brownies?  Especially this one, mocha and white chocolate chunks?   This can be served in any occasion, from pot luck to a dessert after an elegant dinner.

 

Ingredients:

  • 6 oz Bitter Sweet Chocolate, coarsely chopped

  • 4½ oz Butter

  • 1 cup All Purpose Flour

  • 1 tsp Baking Powder

  • ½ tsp Salt

  • 2 tsp Instant Espresso powder

  • 1 cup Sugar

  • 3 Eggs

  • 2 tsp Vanilla Extract

  • 8 oz White Chocolate, cut into chunks

Preparations:

1. Melt Bitter Sweet Chocolate and Butter in a double boiler.



2. Cool at room temperature.

3. Preheat oven to 325 degree F.

4. Line a 9 * 11 baking pan with parchment paper.

5. In small mixing bowl, combine flour, baking powder, salt and espresso powder.

6. In a large mixing bowl, add eggs , sugar and vanilla extract.  Using an electric mixer, beat until it turn pale and thick.



7. Fold in the Chocolate mixture.


8. Sift and fold in the flour mixture.

9. Add White Chocolate Chunks into the batter.

10. Transfer batter to baking pan.

11. Bake for 30 minutes.
