Homemade Salted Egg (醃鹹蛋)



Salted Egg is one of my favorite foods. But it's so difficult to get good Salted Egg in Canada. Why not make it myself?

 

Ingredients:

  • 8 Eggs

  • 1 Cup Coarse Salt

  • 4 Cups Water

  • 1 tbsp Shoa Hsing Rice Cooking Wine (紹興酒)

  • 2 tsp Sichuan peppercorns (花椒)

  • 1 pcs Dried Star Aniseed (八角)

Preparations:

1. In a large saucepan, add water, salt, Sichuan pepper, Dried Star Aniseed. Bring it to boil until the salt is dissolved.

2. Removed the brine solution from heat, let cool.

3. Add cooking wine into brine solution.

4. Arranged the eggs in a cleaned jar.

5. Pour the brine solution into the jar. Tightly covered the container, place in a cool and dark place.



6. Let brined for 30 days.

7. After 30 days, drain the eggs out and wipe dry.
