Homemade Peking Duck


Peking duck is one of the most famous and popular Chinese dishes. Traditional recipe is complicated and time consuming. This recipe is simple and tasted like you eat in the restaurant.


Ingredients:


For the duck:

  • 1 Whole Young Duck

  • 1 tbsp Five Spice Powder (五香粉)

  • 2 Dried Star Aniseed

  • 1/2 Lemon

  • 2 inches Knob of Ginger

  • 2 tsp of salt

Marinate:

  • 2 cups Water

  • 1/2 cups Shoa Hsing Rice Cooking Wine (紹興酒)

  • 4 tbsp Brown Sugar

  • 2 tbsp Five Spice Powder (五香粉)

  • 1/2 Lemon

  • 2 inches Knob of Ginger

Preparation:

1. In a large saucepan, add all ingredients for the marinate. Bring to a boil, lower heat to medium. Let simmer for 15 minutes.







2. Wash the duck, cut off excess for from cavity and neck area. Pat dry with a paper towel.



3. Gently separate the skin from the breast meat through the breast to the neck. Ensure not to tear the skin.

4. Turn off the heat of the marinate. Place the duck into the marinate. 3 minutes on each side. Pat dry with a paper towel. Reserve the marinate for roasting.



5. Hang the duck over a pot or roasting pan in a well ventilated place for a few hours. Until the skin feels dry.

6. Place Dried Star Aniseed, Lemon and Ginger inside the cavity.


7. Combine Five Spice Powder with Salt. Rub it all over the duck and inside the cavity too.



8. Preheat the grill to about 375F.

9. Place the duck on the rotisserie spit and secure with forks. Place the spit on the grill. Start the motor and close the lid.

10. Roast for about 1 hr or internal temperature is 180F.


11. Slice and Serve.
