Drunken Chicken (醉雞)



I've try making Drunken Chicken a few times, but this one really bring the favour to another level. Just the Drunken Chicken Sauce itself taste pretty good, not too stronge that it can be a kid's friendly dish. But for adult, you may want to have a little more of the wine favour. So I add another half a cup of Shoa Hsing Rice Cooking Wine.


 

Ingredients:

  • 6 Boneless Chicken Thigh

  • 2 Strips of Black Forest Ham

  • 1 bottle Drunken Chicken Sauce

  • ½ Cup Shoa Hsing Rice Cooking Wine (紹興酒)

Preparations:

1. Cut Ham into 2 rectangular strips.

2. Lay the boneless chicken thigh evenly on a plastic wrap skin side down.

3. Put ham slick on top of the chicken thigh.

4. Roll the chicken with ham inside tightly.

5. Steam for 30 minutes until fully cooked.

6. Removed plastic wrap. Let cool.

7. In a Zip Lock bag, combine the Drunken Chicken Sauce and Shoa Hsing Rice Cooking wine.

8. Place the chicken into the Drunken Chicken Sauce. Closed tightly, try to remove as much air in the bag as possible.

9. Let it chill in the refrigerator overnight.

10. Slice thinly when serve.
