Coconut Tapioca with Taro Dessert (椰汁芋頭西米露)


This is a popular dessert in most Chinese Restaurant.  It can be served hot or cold.  You can adjust the ingredients to suit your preference.

 

Ingredients:

  • ½ Cup Tapioca

  • ½ Cup Taro, big chunks

  • ½ Cup Coconut Milk

  • ½ Evaporatd Milk

  • 1 Cup Sugar (adjusted to suit your taste)


Preparations:

1. In a medium mixing bowl, soak Tapioca in water for 15 minutes.


2. In a medium pot, add 2 L of water.  Bring water to boil.  Add Tapioca, turn to medium low heat.  All the Tapioca to simmer until it turns from white to translucent.


3. Drain Tapioca, rinse under cold water.

4. In a large pot, bring 3 L of Water to boil.  Add Sugar, let simmer until sugar dissolved.

5. Cut Taro into chunk.  Add Taro.  Let it simmer until Taro softened.



6. Add coconut milk, evaporated milk and tapioca.



7. Bring soup to a boiled.  Removed from heat.

8. Let cool and put into the refrigerator if serve cold.
