This is a very simple chocolate cookies. and it really goes well with coffee or milk. You can decorate the cookies by adding almond slices, or white chocolate before baking. Or be creative, drawing some pictures onto the plain cookies with icing after they are cool.
Yields: 60 cookies
Ingredients:
125 g Butter, diced
200 g Milk Chocolate, diced
1 Cup Brown Sugar
3 Eggs, lighten beaten
1 tsp Vanilla Extract
1 ½ Cup All Purpose Flour
1 ½ Baking Powder
¼ Cup Coco Powder
Preparations:
1. In a clean bowl, melt butter and chocolate, over a saucepan of simmering water.
2. Remove from heat.
3. Add sugar, eggs and vanilla extract to chocolate mixture. Mixed well.
4. In a small bowl, combined flour, baking powder and coco powder.
5. Sift in flour mixture into chocolate mixture. Mixed until just combined.
6. Freeze the cookie dough for 30 minutes or until firm.
7. Lined baking pan with parchment paper. Roll into ¾ inch balls, roll each in sugar. Place dough ball on baking pan, 1 inch apart.
8. Bake cookie for 15 minutes. Let cool.
