Chocolate Cake


No need cake mixed anymore.  This is a very easy recipe and it made perfect chocolate cake all the time.  Sugar can be adjust from 1 ½ cup to 2 cup depends on your taste.  I only used 1 ½ because I’m going to frost the cupcake with chocolate ganache.

Yield: 24 cupcakes

Ingredients:

  • 1 ½  to 2 Cup Sugar

  • 1 ¾ Cup All Purpose Flour

  • ¾ Cup Cocoa Powder

  • 1 ½ tsp Baking Powder

  • 1 ½ tsp Baking Soda

  • 1 tsp Salt

  • 1 tsp Espresso Powder

  • 2 Eggs

  • 1 Cup Milk

  • ½ Cup Vegetable Oil

  • 2 tsp Vanilla Extract

  • 1 Cup Boiling Water

Preparation:

  1. Heat oven to 350 degree F.  Line muffin pan with paper baking cups.

  2. In a large bowl, stir together sugar, flour, cocoa powder, baking powder, baking soda, salt and Espresso Powder.

  3. Add eggs, milk, vegetable oil and Vanilla Extract.

  4. Using an electric mixer, beat for 2 minutes.

  5. Stir in hot water.

  6. Fill baking cups with batter.  (2/3 full)

  7. Bake for 25 minutes.
