No need cake mixed anymore. This is a very easy recipe and it made perfect chocolate cake all the time. Sugar can be adjust from 1 ½ cup to 2 cup depends on your taste. I only used 1 ½ because I’m going to frost the cupcake with chocolate ganache.

Yield: 24 cupcakes
Ingredients:
1 ½ to 2 Cup Sugar
1 ¾ Cup All Purpose Flour
¾ Cup Cocoa Powder
1 ½ tsp Baking Powder
1 ½ tsp Baking Soda
1 tsp Salt
1 tsp Espresso Powder
2 Eggs
1 Cup Milk
½ Cup Vegetable Oil
2 tsp Vanilla Extract
1 Cup Boiling Water
Preparation:
Heat oven to 350 degree F. Line muffin pan with paper baking cups.
In a large bowl, stir together sugar, flour, cocoa powder, baking powder, baking soda, salt and Espresso Powder.
Add eggs, milk, vegetable oil and Vanilla Extract.
Using an electric mixer, beat for 2 minutes.
Stir in hot water.
Fill baking cups with batter. (2/3 full)
Bake for 25 minutes.
