Chinese Marinade Duck Wings (滷水鴨翼)


This is a classic Chinese appetizers/snacks. In the restaurants, the same pot of marinade was being cook over and over again, additional seasonings are added to the pot every day. The older the marinade is, the better it tasted.

 

Ingredients:

  • 1 lb Duck Wings

  • 2 slice Ginger

  • 8 pcs Dried Star Aniseed

Seasoning:

  • 1 Cup Soya Sauce

  • 2 tbsp Rock Sugar

  • 2 tbsp Cooking Wine

  • 2 tsp Salt

  • 2 tsp Black Pepper

  • 2 tsp Five Spice Powder

  • 1 cup water

Preparation:

1. In a medium pot add 2 L of water. Bring water to boil, add Duck Wings. Bring it to boil Let it simmer for 3 minutes. Drain water from Duck Wings. Set aside.

2. Add ginger, dried star aniseed and seasoning into the pot.

3. Add duck wings, bring sauce to a boil. Turn down the heat to medium-low. Let it simmer for 30 minutes.

4. Turn off heat. Do not remove led and let it sit for another 30 minutes.
