Why are these cookies so special? They look different than regular cookies. They are little charcoal cookies. Has a bite, they are in between brownies and cookies, crunchy outside and chewy inside.
Yields: 30 cookies
Ingredients:
½ Cup Butter
1 Cup Brown Sugar
1 tsp Baking Powder
1 ½ tsp Espresso Powder
1 ½ tsp Vanilla Extract
½ tsp Salt
2 Eggs
2/3 Cup Unsweetened Cocoa Powder
1 ½ Cup Whole Wheat Flour
2 Cup Bitter Sweet Chocolate Chips
Preparations:
1. In a medium bowl, mixed flour, coco powder, espresso, baking powder and salt.
2. In a large mixing bowl, cream brown sugar and butter until light and fluffy.
3. Beat in egg and vanilla extract.
4. Sift in flour mixture and mix well.
5. Mix in the chocolate chips.
6. Put in refrigerator for at least 45 minutes until firm.
7. Preheat oven for 350 degree F. Line mini muffin pan with paper cup liners.
8. Shape dough into 1 inch balls. And place into muffin pan.
9. Bake for 15 minutes.
