As everyone are getting conscious on what they put into our stomach everyday, how about treating yourself some comfort foods for dinner tonight, especially a stressful work day. This dish can be made the night before, just heat it up at dinner time. It goes well with steamed rice or noodles.
Ingredients:
1 lb Pork Belly
1 tbsp Vegetable Oil
Seasonings:
½ Cup Soya Sauce
¼ Cup Shoa Hsing Rice Cooking Wine (紹興酒)
10 g Rock Sugar
20 g Brown Sugar (片糖)
1 ½ Cup Water
1 tsp Salt
6 pieces Shallots

Preparations:
1. Blanch pork belly in boiling water for 15 minutes.

2. In a sauce pan, heat oil. Brown each side of the port belly.

3. Add seasoning and bring it to boil. Simmer with medium heat for 30 minutes.

4. Remove pork belly from sauce pan, let it cool. Cut into cubes.

5. Put the pork belly back to the sauce pan and simmer for another 15 - 20 minutes, until tender and sauce thicken.
