Baked Mussels with Mashed Potatoes


Who don’t like mashed potatoes?  You can’t go wrong with mashed potatoes.  There are so many variations, but the basic ingredients are potatoes, cream cheese, milk and butter.  You can also make dishes using mashed potatoes.

 

Ingredients:

  • 1 lb Frozen New Zealand Green Shell Mussels

  • 3 large Potatoes

  • 3 tbsp Herb & Garlic Cream Cheese

  • 1/3 Cup of Milk

  • 2 tbsp Butter

  • 200 g Bacons (cut into small pieces)

  • A little bit of Japanese Mayonnaise

Preparations:

1. Wash and dry mussels.

2. In a small saucepan, sauté bacon until golden brown and crispy.


3. Wash potatoes.  Place the whole potatoes onto a microwave saved dished.

4. Place potatoes in the microwave.  Microwave on HIGH for 15 mintues (check every 5 minutes) or until is cooked.

5. Peel the potatoes if desired.

6. Place the cooked potatoes in a large bowl.  Add butter, using a potatoes masher, mashed the potatoes until smooth.


7. Add Milk, cream cheese.


8. Add Salt and pepper.


9. Preheat oven to 400 Degree F.

10. Add a thin layer of Japanese Mayonnaise onto the mussels.

11. Add Bacon.

12. Top Mussels with Mashed Potatoes.

13. Bake Mussels for 15 minutes or until golden brown.
